
You really can’t go wrong with a good one pot dish, and my beef stew is always a winner. This video is six minutes long, but it only took half of that to prep the food. There really is no excuse not to get cooking!
Ingredients: to feed 4-6
750g good quality stewing meat (I use ox cheek)
1 litre of stock
50ml apple cider vinegar
500g frozen veg (I use Brussels sprouts)
3 large carrots
2 sweet potatoes
large onion
3 cloves garlic
1 star anise
1 bay leaf
Method
– chop up your meat and veg nice and chunky, and place into a large cooking pot
– add the star and bay
– add all the liquid
– cook for 6 hours on 150C with the lid on
Cooking does not get easier than this! Enjoy π

I am so jealous of your big kitchen. That island in the middle would be brilliant for cooking with the kids! I always end up on the side of the sink to prep everything because there is no space anywhere else. I don’t put sweet potatoes in stews, but I definitely will from now on. I’ve started to use them all the time and I love their sweetness. x

Fantastic Renee! We love stew in our house. It is such a great way to cook and to use up whatever veg is to hand. I totally agree with your view on meat. You need a suitable cut but it does not mean it has to be expensive.
