Polly Tries: Paleo Bread (GF, DF, YF, RSF)

Today I am going to be showing you how to make such a delicious paleo bread. This might sound a bit strange, but one of the things that makes this bread so good is chia seeds. They give the bread a lovely crunch and a little bit of texture, which makes it so delicious.

I have been cooking and baking for a while now, and I have to say this is the best bread I have ever made. Personally I like it better than ordinary bread and sourdough. If you want, you can use flax seed instead of chia, or a combination, but I prefer chia seeds.

As you mix the ingredients together, it forms a batter not a dough. But you will see all this for yourself in my video. Don’t worry if it’s flat going into the oven, because the bicarb will help it rise up quite a bit. The reason I like this paleo bread more then ordinary bread, is because it has more flavour and isn’t dry at all. It’s super moist and yummy, especially with delicious toppings on it.

Let’s get started!


1/2 cup Ground Almonds
1/3 cup Arrowroot
1/4 cup Chia Seeds
2 eggs
3 Table Spoons Olive Oil
1 Table Spoon Maple Syrup
1 Tea Spoon Bicarb, make sure you sieve it well so there are no lumps
1 Tea Spoon Cider Vinegar


-Pre-Heat your oven to 170c or 350f
-In one bowl mix together eggs, oil, maple syrup and cider vinegar
-In another bowl mix ground almonds, arrowroot, chia seeds and your sieved bicarb
-Put in a tin greased with coconut oil
-BAKE for 25-35 mins (depending on how hot your oven is)
-And enjoy

Suggested toppings:

-Almond Butter
-Peanut Butter
-Chocolate Spread made with 1 table spoon of coconut oil 1 tea spoon of honey 1 tea spoon of cocoa
-Any Jam you like will go good but I think strawberry is the best!

How to Make the Perfect Paleo Pizza (GF, DF)

Three years ago I created my paleo flatbread recipe, and I’d say it’s been made at least a hundred times since. My little crew love to use it as the base for pizza, which is always a fun meal as it involves the whole family. Mumsnet came to our house to film us making our perfect paleo pizza, and we had a blast!

The base is ridiculously easy to make, and is super tasty. The two main ingredients are arrowroot and coconut flour. Arrowroot is a non-grain resistant starch said to help lower blood sugar levels, which is always a win in my book. It also costs a fraction of the price of nuts, which are my other go-to flour substitution. Coconut flour has many health benefits and compliments the arrowroot perfectly. Perfect paleo pizza – full recipe 

Ingredients for the base (super yummy on its own as a flatbread):
1 cup ground arrowroot
1/3c coconut flour
1/3c fat of choice
1/3c water
1 egg
1 clove garlic, chopped finely or crushed
1 tbsp apple cider vinegar
1 tsp mixed herbs
1/2 tsp sea salt

Other ingredients:
Tomato puree or pesto
Favourite cheese
Favourite toppings

– preheat oven to 200C and line a baking tray with parchment paper

– in a small saucepan put the fat (I like using leftover dripping from roast lamb), vinegar, garlic and water. Heat gently until it’s all liquefied

– while that is heating, put the arrowroot, salt and herbs into a large bowl and stir

– make a well in the centre and crack the egg in it, then pour in the warm fat mixture and give everything a good stir to form a sticky dough

– add the coconut flour and mix well to form a ball

– then start putting it onto the baking tray, either as one large bread or several small ones if you have little helpers like I do

– remove from the oven and spread over your tomato puree or pesto

– add your toppings and cheese

– cook for another 5 mins and serve immediately
