Super Easy, Very Low Sugar Chocolate Cupcakes

If you’re after a quick and simple gluten and dairy free fairy cake that is low in sugar and suitable for the wee ones, then look no further. These little delights contain just a couple of grams of the S word, and I have never ever had a complaint from a child yet 🙂

Ingredients for 12 cupcakes
75g ground nuts (I’ve used almonds, cashews, brazils and pecans in this recipe before and they all work as well as each other)
60ml olive oil
2 eggs
a ripe pear
2 tbsp cocoa powder
2 tbsp unrefined muscavado sugar
Tsp GF baking powder

Method:
– preheat the oven to 175C and prepare a 12 hole cupcake tin with cases

– whiz together all ingredients in a blender or food processor until you have milkshake consistency

– divide into the cases, preferably straight from the blender jug to save on washing up

– bake for 15 mins and enjoy!
