Paleo Cake Pops (Gluten Free, Dairy Free, Refined Sugar Free)

My paleo cake pops literally go against the grain, and embody everything a small sweet treat should be. When it comes to food, substance should always win over style. Unfortunately with cakes, and especially cake pops, this is rarely the case. The other day we were housebound due to one thing and another, and the girls were going a little stir crazy so I thought we would make some of these little babies as a distraction. It worked wonders and certainly broke the tension. It was also a fabulous activity, even if my kitchen side did resemble a bomb site afterwards. 

Ingredients for 20(ish) paleo cake pops:
a cake, I used this recipe 
50g raw organic cacao butter
2 heaped tbsp cocoa
1 tbsp honey

Method:
– allow your cake to cool completely then crumble into a tiny pieces

– in the meantime melt the cacao, along with the cocoa and honey in a small bowl set over a saucepan of simmering water

– roll your cake crumbs into bite sized balls, then place in the freezer for ten minutes

– now dip each piece into your melted chocolate* which will set instantly. Enjoy 🙂

*if you don’t want the faff of making your own chocolate, just melt a 100g bar instead
